Starting a Restaurant or Café: How to Handle Permits

Opening a restaurant or café is a dream for many, but before welcoming customers, it’s crucial to ensure all necessary permits and notifications are in order.

VASEK business advisor Kenneth Dalkvist reminds that applying for permits well in advance makes it easier to start your business and reduces stress.

“Many are surprised by how many different notifications and permits are required even before the opening day. I recommend contacting a business advisor right away and creating a realistic schedule for the permit process together,” Dalkvist advises.

Key things an entrepreneur must remember:

Registering your business and getting a Business ID

Food premises notification

Alcohol serving permit

  • The Regional State Administrative Agency (AVI) grants the permit. Allow time for the application process and collecting the required documents.

Hygiene passports

  • Everyone handling unpackaged food must have a valid hygiene passport.
  • Create self-monitoring plans for both alcohol and food handling.

Renovations and building permits

  • Make sure that the premises you choose for your business meet the requirements for running a restaurant or café. This way, you can avoid costly renovations or having to move to a new location later.
  • If renovating the premises, check whether you need a building permit or an action permit from the building supervision authority.

Rescue plan and safety measures

  • Prepare a rescue plan if your facility accommodates many customers, and arrange for a fire safety inspection.

Waste management contract

  • Establish a contract with an appropriate waste management provider and ensure all recycling requirements are fulfilled.
